Lazy Days: Wibbly Wobbly Wimbledon Pimm's Jelly

Wimbledon is well underway! Whether you're heading to the stadium to watch a match, or planning on staying at home, Wimbledon is the perfect excuse to indulge in strawberries and Pimm's. The lovely people at Rodda's have shared with us this ace, summery recipe for Pimm's jelly - a sweet and fruity treat to enjoy during the tennis, or just while you're soaking up some sunshine at a picnic in the park.

Makes 6

For the Jelly

170ml water

100g caster sugar

Zest of 1 orange

6.5g sachet gelatine (or vegetarian gelatine)

200ml Pimm's

200ml lemonade

 

For the fruit topping

Cucumber

Orange

Strawberries

Raspberries

Mint

 

You will need

6 jam jars

  1. Place the water and sugar in a pan. Grate in the zest of the orange and place over a medium heat to dissolve the sugar. Once the liquid is warm, whisk in the gelatine until smooth.
  2. When the gelatine is dissolved, pass the liquid through a fine sieve into a clean jug. Add the Pimm's and lemonade, gently stirring to combine. Pour into the 6 prepared jam jars.
  3. Add slices of cucumber, orange, strawberry and raspberry to the top of the jellies. Place in the fridge and chill until set - this will take at least a couple of hours.
  4. When ready to serve add a dollop of Rodda’s Cornish Clotted Cream to the top of each jar and garnish with mint leaves.

Top Tip

These jelly jars are perfect for taking on a picnic for an impressive, tasty dessert - maybe even to Henman Hill! Simply screw a lid on each jar and ensure they travel upright. When ready to serve, add a dollop of Rodda’s Clotted Cream and a sprinkling of mint.
