Lazy Days: Easy Vegan Brownies
There’s only a few days of ‘Veganuary’ left. Whether it’s been a challenging month for you, or you’ve loved every minute and this is the start of the new you, we thought we’d bring you an inspiring recipe for some sweet (albeit healthier) brownies to help ease you out of the month of January. These no-bake vegan brownies are a dream! Not only is the recipe a doddle to make, but you can indulge your sweet tooth without any of the guilt – besides, we don’t believe in fad diets, only delicious food that makes you feel good. Makes 16-20 brownies / Preparation time 15 mins
Ingredients:
100g whole almonds
100g walnut pieces
50g quinoa flakes
75g dried apple rings
5tbsp raw cacao powder, plus 1tsp extra to dust
200g pitted medjool dates
4tbsp date syrup
2tsp vanilla extract
40g dried cranberries or sour cherries, roughly chopped
- In a food processor place 75g almonds, 75g walnuts, quinoa flakes, apple rings and cacao. Whizz until fine crumbs. Add dates, date syrup and vanilla extract and pulse until finely chopped and dough-like. Transfer to a bowl, and stir in the remaining walnuts.
- Line a 20cm square tin with baking paper. Spoon in the mixture, smoothing the surface. Roughly chop remaining almonds and scatter over the brownies with walnuts and cranberries. Press into the surface. Dust with cacao and chill for at least an hour. Slice into bars. Keep chilled and use within 3 weeks.
